Breakfast Scramble

Serves: 4

Ingredients

  •  4 eggs
  • 1/2 cup grated cheddar cheese 
  • 1 cup of meat of choice precooked
  • Dash of hot sauce

 

Directions

  1. Scramble eggs in a pan with cheese and meat of choice. 
  2. 2. Move to baking dish, top with hot sauce and bake for 15 mins at 350 degrees F, top with hot sauce and serve hot!

 

Holy Grail Pizza Crust

PREP TIME 15 Minutes

COOK TIME 25 Minutes

SERVES 4 (cut into 8, 2 slices per serving)

INGREDIENTS

· 1 1/2 cups shredded mozzarella cheese

· 4 oz cream cheese

· 3/4 almond flour

· 1 egg

INSTRUCTIONS

1. Place the cheeses in a med bowl; microwave till melted.  LET IT COOL

2. Once you can handle it safely, add the egg and almond flour; mix with your hands until it forms a ball.

3. Between 2 pieces of parchment paper, roll the dough out until desired thickness. Bake for 15 minutes or until golden.

4. Remove from the oven; top with your favourite toppings.

5. Return to the oven until cheese is bubbly.

INGREDIENTS

· 1/2 cup Philadelphia Jalapeño Cream Cheese Product

· 1/4 cup Cracker Barrel Shredded Old Cheddar Cheese

· 6 large fresh jalapeño peppers, cut lengthwise in half, seeded

· 12 slices bacon

INSTRUCTIONS

 

  1. Heat oven to 425ºF.
  2. Combine cheeses; spoon into pepper halves. Wrap with bacon, overlapping edges as necessary.
  3. Place filled sides up in shallow foil-lined pan.
  4. Bake 17 to 20 min or until bacon is done.

RECIPE NOTES

*For best results, tuck ends of bacon under peppers when placing in prepared pan to prevent bacon from unwrapping as it cooks. Or, use toothpicks to secure filled peppers before baking; remove toothpicks before serving..

Bacon Cheesy Burger Dip

COOK TIME 20 Minutes

SERVES 4

INGREDIENTS

· 1/2 pound ground beef

· 8 bacon strips (cut into chunks)

· 1/4 diced onion

· 1 clove garlic – chopped

· 4 ounces cream cheese (softened)

· 1 tablespoon coconut aminos

· 2 tablespoons tomato paste

· 1/2 cup full fat sour cream

· 1/4 cup mayonnaise

· 1/2 cup mozzarella, shredded

· 1/2 cup cheddar cheese, shredded

INSTRUCTIONS

1. Pre-heat oven to 350°F

2. Cook ground beef then drain.

3. Cook bacon until crispy.

4. Sauté onion and garlic in grease

5. In a large bowl mix the cream cheese, sour cream, mayonnaise, cheese, coconut aminos and tomato paste.  Add beef, bacon, onions and garlic to mixture above and stir until combined.

6. Pour into baking dish and bake for 15-20 minutes

INGREDIENTS

  • 1 Cup Heavy Whipping Cream
  • 1 Tbsp Powdered Erythritol
  • 1 Tsp Vanilla Extract

INSTRUCTIONS

1. Mix all ingredients in bowl and chill for 2 hours in fridge.

3. Add mixture to the mixer and whip on high for 2 – 5 minutes until stiff peaks are formed.

Zucchini Parm Fries

Zucchini fries have to be one of the tastiest side dishes. They take minutes to make and are healthy and easy! Send me a message on my website to tell me how much you like this recipe!

PREP TIME     10 minutes

COOK TIME     15 minutes

 

INGREDIENTS

·

  • 2 medium Zucchini
  • 3/4 cup Grated Parmesan cheese
  • 1 large Egg
  • 1/4 tsp Garlic powder
  • 1/4 tsp Black pepper

INSTRUCTIONS

1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment.

2. Cut each zucchini in half lengthwise 4 times (to make eight long sticks from each squash). Then cut the sticks once in half, making 16 sticks from each zucchini.

3. Prepare two shallow bowls – one with eggs and one with a mixture of grated parmesan cheese, garlic powder, and black pepper. Dip each squash stick in the egg, shake off the excess, then press into the parmesan mixture, coating all sides.

4. Bake for about 15-20 minutes, flipping the fries and rotating the pan halfway through, until golden and crispy.

PREP TIME 15 Minutes

COOK TIME 30 Minutes

SERVES 12

INGREDIENTS

· 12 thin sliced skinless boneless chicken breasts, 3 oz each

· salt and fresh cracked pepper to taste

· 1 large egg

· 2 large egg whites

· 1 tbsp water

· 1/2  cup grated parmesan cheese

· 5 oz (6 slices) thinly sliced deli ham, sliced in half

· 12 slices Swiss cheese (6 oz)

· 3 tbsp Salted Butter Melted

INSTRUCTIONS

1. Pre-heat oven to 425°F

2. Wash and dry the chicken cutlets; lightly pound the chicken to make thinner and lightly season with salt and black pepper.

3. Lay the chicken on a working surface and place a slice of ham on top of the chicken, then the cheese and roll, setting them aside seam side down.

4. In a medium bowl, whisk eggs and egg whites along with water to make an egg wash

5. In another bowl, combine Parmesan cheese, salt and pepper. Dip the chicken into the egg wash and then into the grated cheese mixture.

6. Place chicken seam side down on a baking sheet. Bake for 30 minutes or until done.

7. Drizzle with melted butter before serving.

  1. Wash, trim and quarter radishes.

  4. Sprinkle with salt and pepper.
  5. Roast at 375 for 20 to 25 minutes.

2. Add rest of ingredients and toss until combined.

Portobello, Bacon and Cheese Stuffed Burgers

DSC_0058This burger I concocted last night while I was just playing with flavours. It was delicious! I used my new burger stuffer to make them which was also fun. Try it out! In the photo it’s topped with my Kaleslaw, and my Squishy Buns which you can find both recipes in my upcoming book. It was absolutely delish!

Portobello, Bacon and Cheese Stuffed Burgers

A Savory Cheese Burger with a surprise in the center

Ingredients

  •  2 Lbs Ground Beef
  •  ¼ diced Onion
  • Salt and Pepper to taste
  • 1 Tsp Garlic Powder
  • 1 Tsp Chili Powder
  • 1 Egg
  • 1 Portobello Mushroom diced
  • 4 Pre Cooked Slices of Bacon
  • 1 Cup of Grated Cheddar Cheese
  • Dash of Olive Oil

Directions

  1. On medium high, fry the mushrooms in a bit of oil until par cooked.  Put aside.
  2. In a bowl, Mix the beef, onion, spices and egg until combined well.
  3. Divide beef into 8 parts. Place 1 part into the burger stuffer, Top with 1 slice of bacon, some mushroom and cheese. Top with another part of burger and press.
  4. Fry in pan on medium heat until fully cooked. Serve Hot!
