Here it is! What you’ve all been waiting for. He most delicious low carb, keto bagel recipe out there! I ALWAYS eat what I’m writing about while I’m writing and goodness these are great! I never was one for white bread. So I’m super happy with how these turned out. With all the extra seeds and nutrients. Perfect for my palette.

With a combination of seed and nut flours, mixed with a soft mozzarella – these babies turn our amazingly good. They dont stand a chance in your house once you’ve tried one. Keep them in the fridge for up to 1 week for freshness. Toast them for the perfect bagel experience. Enjoy my friends!

The Best Keto Brown Bagels

Servings: ”6″

Difficulty: ”Medium”

INGREDIENTS:

3/4 CUP ALMOND FLOUR

2 CUPS SHREDDED SOFT MOZZARELLA

1/3 CUP FLAX SEED FLOUR( I MAKE MY OWN BY GRINDING FLAX IN A COFFEE GRINDER)

1 EGG BEATEN

1 TSP GARLIC POWDER

1/2 TSP ONION POWDER

1/2 TSP BAKING POWDER

¼ TSP PINK ROCK SALT

EXTRAS *OIL FOR YOUR HANDS AND BAGEL TOPPINGS. I USED RIED SPICY PEPPERS, FLAX AND CHIA SEEDS

DIRECTIONS:

  1. Preheat oven to 375°F.
  2. Melt the mozzarella and flax grounds in microwave for 30 seconds. Stir and melt 45 seconds more.
  3. Add the almond flour, garlic powder, onion powder, salt, baking powder and mix thoroughly.
  4. Finally add the egg and mix until fully combinedand the dough is sticky.
  5. Oil your hands and divide the dough into 6 parts. Roll them into logs and attach at the ends. Sprinkle toppings of your choice on top and pat down a bit so they stick. You could also use an egg wash but it’s not needed. You can bake them in a donut mold or on parchment. Bake for 20 mins. Until golden brown.

The Best Keto Honey Garlic Chicken

Servings: ”4″

Difficulty: ”Medium”

INGREDIENTS:

4 CHICKEN BREASTS SKINLESS

CRUSTY CHICKEN COATING

1 CUP ALMOND FLOUR

1 TBSP GARLIC POWDER

¼ TSP THYME

¼ TSP BASIL

¼ TSP SAGE

DASH OF PINK ROCK SALT

DASH OF PEPPER

CHICKEN SAUCE

1/4 CUP FIBER SYRUP

3 TBSP COCONUT AMINOS

DASH OF PINK ROCK SALT

1 TBSP BROWN SUGAR SUBSTITUTE

2 TBSP MINCED GARLIC (2 CLOVES)

2 TBSP GHEE OR BUTTER

DIRECTIONS:

  1. Preheat oven to 375°F.
  2. Mix all of the crust coating ingredients together and spread out evenly on a flat plate.
  3. Dip the chicken in the flour substitute mixture until fully coated. Bake in oven for 45 minutes.
  4. In a saucepan over medium heat, place fiber syrup, brown sugar sub, coconut aminos, salt and butter. Bring to a simmer. Add garlic and simmer for 1 to 2 minutes. Set aside.
  5. When chicken is done baking, gently spoon the syrup garlic mixture over the crusty coating on the chicken.
  6. Plate and serve immediately.

*Can be done without the sugar sub. Added sweetness makes it more honey garlic tasting. Enjoy!

”Keto Pumpkin Chocolate Caramel Pie

INGREDIENTS

CRUST

1 CUP ALMOND FLOUR

1 CUP GROUND PECAN FLOUR

1 TBSP POWDERED ERYTHRITOL

¼ CUP MELTED BUTTER

DASH OF SALT

 

PIE FILLING

2 CUPS ORGANIC PUMPKIN PUREE

3 EGGS

1 TSP CINNAMON

1 TSP NUTMEG

1 TSP ALLSPICE

1 TSP GINGER

½ TSP GROUND CLOVES

2/3 CUP HEAVY WHIPPING CREAM

½ CUP POWDERED ERYTHRITOL

Directions

  1. Preheat oven to 375°F.
  2. Mix all of the crust ingredients together and press and mould into a greased pie plate. (I use a glass one)
  3. Placed all of the filling ingredients into a blender. Blend on puree for 20 seconds and then pour into unbaked crust.
  4. Bake for 30-35 minutes until crust edges are golden and pie filling looks puffy.
  5. Let cool fully before serving or it will fall apart.

*Top with roasted nuts, melty keto approved chocolate and homemade caramel sauce from THE BEST OF KETO BOOK*

Directions

  1. Place all ingredients in mixer with whisk attachment. Stir with a rubber spatula until cocoa is stirred in. Turn mixed on high until your dip thickens to stiff peaks. Serve cold.

Ingredients

  • 1/2 cup +1 tbsp butter
  • 2 tbsp Olive oil
  • 2/3 cup cocoa powder
  • 2/3 cup Swerve Confectioners
  • 3/4 cup almond flour
  • 1/4 cup crushed walnuts
  • 2 eggs
  • Dash of pink Himalayan salt

Directions

  1. Preheat oven to 350 degrees F.
  2. In a bowl, melt butter, swerve, cocoa powder in microwave for 30 seconds.
  3. Whisk mixture until fully combined. Add oil and whisk. Add eggs and whisk until combined. Finally add almond flour and dash of salt and mix again until combined.
  4. Pour into a parchment lined 9×9 baking pan and spread out even. Top with walnuts and bake for 15 to 17 minutes.
  5. Remove from the oven and let cool fully before cutting. Serves 16.

Next week my keto baby girl turns 1 year old and to celebrate I’ve decided to create a no bake unicorn cheesecake because her party theme is unicorns. This is so easy and so tasty you can’t get enough. At only 3 net carbs you could even have seconds! A nice cool treat for these summer months. Enjoy!

Ingredients

Crust

Filling

  • 1 cup heavy whipping cream
  • 4 oz cream cheese softened
  • 1 Tsp Vanilla Extract
  • 1 Tsp lemon juice (optional)
  • 1/4 cup Swerve Confectioners
  • 5 tbsp butter softened
  • Coconut sprinkles (optional) and gel colouring

Directions

  1. Preheat oven to 350 degrees F.
  2. In a bowl, Mix almond flour, pecans, brown sugar sub, cinnamon and butter until combined well and scoop it into a non stick pie plate. Press down firmly all over until evenly distributed and creating a crust shape. Bake for 20 mins. Let cool fully before adding filling.
  3. To make the filling – whip the heavy cream and vanilla on high until stiff peaks are formed. Set aside.
  4. In a mixer with paddle attachment cream together the butter and cream cheese for 1 minute on medium. Switch to whisk attachment and add swerve. Whip on high for 4 minutes until mix has tripled in size.
  5. Fold in lemon juice.
  6. Fold in whipping cream in 3 batches until filling combined.
  7. Separate into 4 bowls. Add gel colouring to each and mix until just combined. Don’t over mix.
  8. Scoop randomly each colour into our crust and smooth out on top. Top with coconut sprinkles ( you can find out how to make them in my book “THE BEST OF KETO”
  9. Refrigerate for 3 to 4 hrs or overnight. Serve cold.

  1. Preheat oven to 375 degrees F.
  2. Mix almond flour, Brown sugar sub, butter and cinnamon together until dough is formed. Smooth put in a greased loaf pan.
  3. Place chocolate bar on top.
  4. Make meringue recipe as directed and smooth out on top of chocolate.
  5. Bake for 25 minutes. Let cool fully and remove from pan gently and cut into 8 squares. Can be reheated in oven or wraped in tin foil and heated over a campfire for a few minutes.
